Tropical Sunrise Smoothie Bowl (Dairy-Free, Vegan, Paleo)

This Tropical Sunrise Smoothie Bowl brings a taste of the tropics to your breakfast table! It's a refreshing, nutrient-packed meal that's both beautiful and satisfying.

Featuring layers of vibrant colors and tropical flavors, this bowl requires just 5 main ingredients and is naturally gluten-free, dairy-free, refined sugar-free, vegan, and Paleo-friendly.

Why this recipe works

This recipe creates a stunning visual effect by making two separate colored layers. The base layer uses pitaya (dragon fruit) powder for a vibrant pink color and mild, sweet taste, while the top layer gets its sunshine yellow hue from fresh mango and turmeric. Using frozen fruit is crucial for achieving the thick, spoonable consistency that defines a perfect smoothie bowl.

The addition of cashew butter provides healthy fats and contributes to the creamy texture, making the bowl more satisfying. A hint of fresh lime juice enhances all the tropical flavors and balances the sweetness. This bowl is packed with antioxidants from the pitaya, mango, and turmeric, making it as nutritious as it is delicious.

How to Make a Tropical Sunrise Smoothie Bowl

1. Prepare the pink layer: In your blender, combine all pink layer ingredients. Blend until completely smooth and thick. You may need to scrape down the sides with a spatula. Transfer to a separate bowl.

2. Prepare the yellow layer: Without washing the blender, add all yellow layer ingredients. Blend until smooth and creamy, adding a tiny bit more coconut milk if needed.

3. Assemble the bowl: Spoon the pink mixture into your serving bowl, smoothing it to cover one half. Carefully add the yellow mixture to the other half, creating a beautiful color contrast.

4. Add toppings: Artfully arrange your chosen toppings along the border where the two colors meet or scatter them across the entire bowl. Serve immediately.
